Nothing Like A Home-Cooked Meal.

I love breakfast. It is my favorite meal, although I rarely rise early enough to eat it, or I am in a rush and grab a piece of fruit to tide me over until lunch. Whichever my reason for not always consuming it (which is probably a good thing), breakfast food still remains my all-time favorite. If I had it my way, I would eat it for breakfast, lunch and dinner. It would never get old. Never.

My parents are notorious for their fabulous breakfasts. I wish that one day I can cook as well as they can. I guess I better start learning so that I don't starve, because lord knows the only thing I can make is mac and cheese and cereal. I am going to make one hell of a wife one day. One morning during spring break me and one of the Bests made breakfast, in high hopes to make it as well as my parents do. My littlest brother helped out too--he is just precious. She (the Best) and I made our first gravy..ever! If you would ask us, we don't think it turned out half bad. While she did mostly the gravy, I went to chopping up some fruit for a fruit medley that consisted of plums, strawberries and mango. Everything turned out pretty tasty. Oh, how I love nothing more than a home-cooked meal. Especially when it is breakfast. Nom nom nom.

Well, It's Been Awhile.


Where has the time gone? I just posted a couple of days ago...not. My life jumped into the fast lane, which ultimately had to put the blog world on halt. Well, I am back for awhile at least, or so I intend to be. Here is the lo down of what I have been up to.

I was home for spring break, as my last post stated. I was so busy trying to spend time with everyone, so busy that I completely forgot that blogs even existed. Can you blame me? I am not one of those people who come home very often, so when I do, I want to see everyone. I loved spending time with my family and especially having nights with my Bests. I miss them. We had dinner downtown at this Italian restaurant. I took my time deciding on what to order. You see, I have this problem of not being able to order a meal off a menu without pictures. If the menu has no pictures of food in it, I am doomed. Well, the bests were antsy to eat, so I tried my best to pick something with being overwhelmed by all the words. Damnit, is it too much to ask for some photos. Well I ended up choosing this dish made up of cheese stuffed torellini tossed in a parmesan cream sauce with chicken, tomatos, artichokes and onions. It was perfect. The Bests and I decided to be adventurous and explored the city. It was such a great time, I had missed times like these with the best.

That weekend was my grandpa's surprise 80th birthday party. I was so excited to see my whole family, it had been too long since I had seen them. Christmas is the last time I have seen them to be exact, or so I think. Well, I brought up the boyfriend to meet everyone (Oh yes, I cannot remember if I have shared with you or not, but my man friend has now become my boyfriend. It's even facebook official). I introduced him around (everyone loved him and even some of my aunts threatened to steal him away from me, kidding of course, but they still thought he was too cute), while everyone awaited my grandpa's arrival. He was running late...as usual. What do you except, he is 80 and all. Well, once he arrived there were lots of pictures, lots of hugs and finally the food was served. I will post more about the party in another post. There are lots of pictures/stories left to come.

Before I knew it, I was packing up my car and headed back to school. I wasn't ready to go back. I needed just another week. The ride back to school is always the worst, it seems to take forever. This time around seemed to fly by, except when I missed three different exits. Yes, count them, not one, or two, but three exits I passed up. You see I am used to having no one in my car to keep me company, but this time around a boy from back home asked me for a ride back down to school. It is kind of a funny story, he was to afraid to ask me for a ride himself, so his girlfriend did it for him and found me over facebook and messaged me. I give her credit, that must have took some balls. I agreed and met off and headed back down to school. I was afraid the ride was going to be awkward and twice as long. He and I hardly spoken before the ride at all, but that didn't last long. He and I never ran out of things to say. Correction, I never ran out of things to say. As usual. I apologized for talking his ear off, but he said he liked to listen and would rather be talking than listen to music the whole way, which made me feel a little better. It was good to find someone at school from back home, because I go to a school where I knew no one from back home. Not a soul.

This week at school has been crazy with school work and what not. First off, Hunger Games comes out tonight, tomorrow, right now? And I had yet to start the series. On wednesday, I borrowed the book from my roommate and finished it today. I am so proud of myself. That is the fastest I have ever finished a book. I am starting the second one tonight, Catching Fire. Also, soccer started for the spring season. Ugh. I am so sore. I am actually sitting in my practice gear writing this. I need a shower, desperately. I also took up this workout class, that counts as my PE gen ed. It is called RIPPED and let me tell you, they should change the name to SORE or WON'T BE ABLE TO WALK class. I waddle everywhere I go. The only light at the end of the tunnel is on the first day of class, my instructor said we (students) would all be in perfect summer, bathing suit shape. Perfect.

Enjoy It While It's Here.

I'm a pretty bad blogger, or at least lately. I realize that I have been distant, but with good reason, I promise. I am currently updating my iPad with the latest and found myself with time to write a post while I wait. If that isn't a first world problem, then I don't know what is. Well, my whereabouts currently is me at my humble abode. That's right a college girl that went home for spring break, instead of a beach. Although, at this point I am regretting on not going to the beach. I love the feel of sand between my toes and seeing everyone's photos and posts of their spring break in Florida is making me highly jealous. I had a professor who put something in perspective for me during our last lecture before break. He said as freshman entering college you have four spring breaks left and each year after that, your spring break diminishes by 25%. I as a sophomore came to the realization that I only have three left. Only three spring breaks left in my lifetime--weird. So my professor encouraged us to live it up, do something you particularly wouldn't, travel somewhere different, have fun, and make memories. So, this spring break, that is what I am going to do. I may have ventured home for break, but that is not going to make a difference in my memories made. I love being able to come home, I love my family, and I love my friends (Bests).

Don't Stop.

The hardest thing for a runner is that first step out the door. For myself, I find the same difficulty. Or, I settle a deal with myself, that I will run tomorrow. Tomorrow's run never happens. I need to quit settling. I needed to get highly active again, so today, I woke up, put on my running shoes, and ran. Why do I always stop running? It saves me. Running is seriously the best stress reliever, anger management, and escape from the world. This morning's run is going to happen more often. I just need to keep telling myself, don't quit, keep running.

A Nip And A Tuck.

Welcome to the new blog lovelies. How do you like it (I can take criticism, but be nice please)?! I am pretty excited about it. However, I am kind of on the fence if it is too much pink. Now, I am usually not one for pink, but for whatever reason, the color pink has me smitten lately. I just love the femininity of it. Plus, it is good for spring. Hmm, does anyone else realize that the colors I use on my blog are baby colors--I need to stop it. Well, enjoy, look around, leave me sweet things to read. Spring Break Is Awesome

::Awkward::
::My dreams, especially when they involve dear friends. My dreams are odd, so odd. In fact, I feel as if I did acid prior to falling asleep. Yep, they get that weird.
::Sending out a mass text for people to come play kickball, and no one shows up.
::Not having your makeup bag all week long.
::Being the only people in the entire restaurant.
::Young girls making videos and posting them on boys Facebook's in efforts of trying to impress them. It's annoying and awkward and you look like a fool. If only you knew.
::My brother's and their first dates to a dance. It's a cute awkward, but oh so entirely awkward.
::Trying to pick up a shot glass out of the oven with hot wax in it. Near impossible, let me tell you.
::Seeing people the next day after a night out. Yep. Awkward to the max.

::That spring break is practically hear. So close, in fact, that I can taste it. I can not wait to spend some time with my Bests.

Inspiration: Gray & Yellow.

This is the color combination that has me completely smitten lately. I have always been a big fan of the color gray. There is just something about the color, except for when you choose to work out in gray. NEVER DO! By all means, avoid wearing gray if you might, just by chance, sweat, even at the littlest bit, because gray loves to show off your sweat more than Angelina loves to show off that leg of her's at the Grammy's. Just saying. Well, back to my current crush on yellow and gray. I prefer a mustard yellow over a lemon yellow, I think. Please, don't make me choose. The just go together so well. Don't ya think?

Today's Ramblings Over A Cup Of Coffee

Today is not so hot. My usage of the word "hot" stands for multiple definitions. The weather is not lovely like it was; I just want the warmness back. I am feeling blah. My coffee no longer has that sensation when I swallow a mouthful, or in other words, it got cold on me while I catch up on blogging. There is so much to do, so my stress level is at an ultimate high. 

Quick question, why do professors wait for the week before spring break to give us more work than they have all semester? Because they hate us? Yeah, that's what I was thinking too. Oh, no professor, I have no other classes other than yours. Actually, I have no class other than yours, so no I wouldn't mind a paper or two and unlimited homework. Why thanks (insert college girl sarcasm). Thank you professors for piling even more shit onto my plate. I hate you.

Now that I got that little rant out of the way. This morning I hopped on the struggle bus to take a trip on it all day long. Ugh, I need a nap. However, my day is looking up ever since I purchased this glorious cup of coffee that I have in my hand. It's amazing how one cup of coffee can make your day instantly better. Coffee makes me all warm and fuzzy inside. Though, my coffee is now cold since I got highly distracted on Pinterest. I best go and pour myself a new cup. Yes, more coffee! Not even mad about it.

Friday.

So sorry for being absent, and I know that my last post was not a positive one. For those that were worried/wondering everyone in this college town is safe. Wind started to pick up badly around 2pm and a short time later the sirens went off. Everyone was rushed to the basement where there was a couple of windows where we could see what was happening outside (I realize windows are not safe, but it was the best place for us to go in the building). The sky was ugly and soon enough the hail came. I fell down so hard that I could have sworn it was snowing. You couldn't see a foot in front of your face, because of how much hail their was. Everyone was on their phones and updating one another. We had a tornado touch down two blocks down the road from campus, but it did minimal damage in its paths. We got lucky. We got very lucky.

As, I am sure you are well aware, other towns were terribly struck. A state of emergency was in effect here in western Kentucky, where at least 20 people were killed by dozens of tornados. The tornados hit 19 counties here and left at least 300 people injured. My heart goes out to those cities who were left with near nothing. I know Kentucky was not the only state that were struck with these disasters. Many towns in numerous states where caught in the tornado's path. To those everywhere who were affected by these tornados, I am dearly sorry. I couldn't imagine the struggles you are facing.

If anyone know's of a site or foundation were the proceeds go towards the families of this tragedy, please let me know. I would love to help.

Storm Warning.

So, where I am located in Kentucky has a severe storm warning in effect today. The storm is to hit us bad by noon-ish. Earlier this week I was woke at six in the morning by one of my roommates telling me the tornado sirens were going off. Good thing I can wake up to those all on my own, right. I'm doomed. All four of us piled into our bathroom, as it is the safest room in the house. While shacked up in their for near an hour, we came to the conclusion that our bathroom is in desperate need of a good scrub down.

Well, the tornado ended up skipping our county (If you must know anything about Kentucky, it is that they don't go by cities. At all. They refer to everything as county. It is something I have gotten extremely used to) and hit one of the next counties over. That next county over is another one of my roommate's hometown (homecounty?). The middle school lost its roof, only blocks from my roommate's home. Scary stuff.

Today, however, is supposed to be ten times worse than the other day, which is freaking me out a bit. A few years ago our campus was stuck with disaster, as a tornado rolled through it and took everything with it. I would highly appreciate it if that would NOT happen again. I love storms, but tornados terrify me. A local new station only had, "The only thing that Western Kentucky can do is to pray" written on their website. Cool. Today is going to be wild.

Only two good things can arise from this situation. One: my two o'clock class gets canceled. Two: the storm is so bad that I don't have to go into work. Other than that, it's all uphill.

This makes me sad. Goodness, it is such a pretty day.

Not Even Ashamed.

I wish I was this girl. I want to be this girl. Yes, I am a 20 year old college student and I am a huge (huge is an understatement) J Biebs fan. Always have been, always will be. If you find this awkward, well then suit yourself. I personally, find this (and him) extremely awesome. For others reading this who also think it's awesome please let me know, because I know I am not the only girl not caring to be a cougar for JB. The only thing that would make this video even more awesome, was if the girl was, well, if the girl was me. Fun fact for you: today is his birthday. Today he is 18. Today he is legal. Hey Justin, if you ever read this, my name is Nicki. Why don't you hit a girl up sometime?

Needing Gift Ideas For Someone Special.

Meet my Papaw. The photo above is of he and I when I was just a babe. Goodness I love him more than I can seem to put into words. He is one of the greatest men I have ever met. I am so thankful that I grew up so close to my grandparents, but for whatever reason, I have always had a strong bond with my grandfather. Welp, this year he is turning 80, on March 17! I still think he still looks just as young as he does in the top picture as he does now. He is a pretty handsome grandpa, don't you think? I sure think so.

I am stuck in quite a pickle. It's not everyday when someone dear to you turns 80 (well, not for a 20 year old girl at least. Maybe, once I am old and wise my friends will be turning 80 left and right, as well as myself, so I will be a pro once that time comes) and I have no idea on what to get him! I have been racking my brain these past couple of days on a good gift for him. If any of you guys could help a sista out and enlighten me with fabulous idea, that would be great.

Also, this is his FIRST ever surprise party. It only took us 80 years to pull this one off. So, a great gift that will really knock his socks off is just what I need!
He was pretty handsome back in his day, scratch that, he is still good looking.
